Introduction to KNAPPSTEIN's Origin
【Clare Valley】
Located about a two-hour drive north of Adelaide, South Australia,
the journey to Clare Valley offers beautiful scenery, with lush pastures, expansive plains, and hidden valleys within the valley.
There are more than thirty towns and villages scattered throughout the region, each boasting picturesque landscapes,
and, of course, it is also renowned for its world-class wineries and top-notch Riesling wines.

Clare Valley, located in South Australia, is home to over 30 wineries.
As the Australian region renowned for its Riesling white wines, Clare Valley is one of the oldest wine-producing areas in Australia, with a winemaking history of 160 years.
Apart from its world-class Riesling, Clare Valley is also well-known for its Shiraz and Cabernet Sauvignon grapes, which have earned significant acclaim.

Clare Valley is composed of five distinct wine regions, each showcasing unique wine styles influenced by the climate, soil, and geographical conditions.
Despite occupying only about 3% of Australia's total vineyard area, Clare Valley is renowned for consistently producing high-quality wines over the long term.
The region is known for crafting refined and elegant white wines as well as rich and age-worthy red wines.

【Special Terrain】
The Clare Valley features significant variations in altitude, ranging from 300 meters to 500 meters. This results in a unique combination of climates within the region.
Although classified as a warm wine-producing area, there are cooler microclimates in some high-altitude regions.
The area enjoys a mild continental climate with warm to hot summers, tempered by refreshing afternoon and nighttime breezes.
There are substantial day-night temperature fluctuations, with daytime temperatures soaring as high as 40 degrees Celsius and dropping to as low as 1 degree Celsius during the grape ripening season.
The undulating geographical layout of the region provides natural protection or exposure to cold winds, contributing to the diverse characteristics of the vineyards in Clare Valley.

【Climate and Temperature/Humidity】
Clare Valley is a wine-producing region with hilly terrain. It experiences an annual precipitation of 232mm, and the average temperature during summer and winter is 22.3°C, with a cumulative temperature of 1874.
Summers are hot, while winters are cool in this area.
The nighttime temperatures are low, and there is a significant day-night temperature difference, effectively extending the ripening period of the grapes, adding complexity to the wines.
Thanks to these climatic features, wines produced in the Clare Valley exhibit excellent richness, structure, and balance.

【Soil Types】
There are eleven primary soil types in Clare Valley, with most of them possessing excellent water retention capabilities, which help sustain grapevines in dry conditions.
The vineyards in the northern part of Clare Valley grow in fertile alluvial soils, while in the western areas, they are planted in sandy loam and quartz stones.
The combination of shale and limestone soils in Clare Valley, along with its cool nights, creates a unique terroir that gives rise to exceptionally distinctive world-class Rieslings.
These Rieslings are typically of medium body, with intense citrus fruit aromas, vibrant acidity, and a long finish.
They have the potential to age gracefully for over a decade.

*Perfect Pairing with Seafood and Light Cuisine
I divided the high-quality grape fruit into two portions.
For the first portion, I placed it in stainless steel tanks for low-temperature fermentation. At the same time, I used a method of early fermentation termination to preserve the inherent lemon and orange aromas of the grapes.
For the second portion, I let it ferment in oak barrels to obtain a silky texture and a sense of quality on the palate, and finally, I blended the two together.

Using Clare Valley's unique traditional winemaking technique, we fermented whole bunches of grapes.
The wine exhibits a clear and deep purple-red color, with subtle white pepper spiciness, sweet black plum, and a delicate touch of oak aromas.
It also presents fine and smooth tannins, providing a multi-layered taste experience that left me amazed and incredibly captivated.
